We live in an arid region, yet somehow people have been farming here longer than most places in the western hemisphere. Partly this is due to our proximity: situated between the tropic and temperate zones, we are also influenced by our geology which has created mountains surrounded by valleys. All these things create a rich biodiversity, and many of our plant species are edible! In this class we will profile a list of native plants that can be used as foods, some of which are potential crops for the arid future ahead posed by global warming.
